Today’s Healthy Dose – Nutrient A-Peel
Fruits and veggies tend to have high concentrations of nutrients in their skin. Hence the vibrant display of color on their outerwear. In the US we tend to peel everything, wasting part of the produce and throwing valuable vitamins and minerals out with the trash. Next time you take the peeler out of that kitchen drawer, stop to think…can I leave the skin on?

Today’s Healthy Dose – Yin and Yang
I’ve become a big believer of balancing my yin with my yang. Figs with blue cheese, a brisk walk followed by lounging in the sun, bacon with sliced tomatoes, some serious thinking followed by some seriously mindless TV. I find the more yin I include with my yang, or yang with my yin, the less likely I am to binge on either one. Who says you can’t have it all?

Granted, they look somewhat like vegetables from Mars, but Kohlrabi is high in fiber and really high in a wide range of vitamins. What to do with this strange looking delectable? I think you know what I’m going to say…. yes, cut them up and roast ’em! You’ll never know their deliciousness unless you try….

It also lowers your blood sugar, helps you get a better night’s sleep, and boosts your immune system. It’s strength from the inside out. Kinda makes you want to try it, huh?

A year ago I would have labeled myself as your average vegetable eater–mostly at dinner with the occasional salad for lunch. Then I set a goal to include veggies on my plate at every meal. Now, if we’re out of organic radishes for me to slice, salt and crunch on over breakfast, I actually feel cheated.
So…inquiring minds want to know… could radish addition actually be a thing? And what veggie that you love could you add to your breakfast tomorrow?

Even vegetables you think you don’t like taste good roasted. And it’s so simple! Cut up some veggies, throw them on roasting pan, add a drizzle of high quality oil, a sprinkle of pure sea salt and freshly cracked pepper, and roast them at 400 degrees until caramelized. Once you try it, you might be surprised at how hard they are to resist.
